Ready in 25 minutes
Vegetable Oil 2 tbsp.
Butter 2 tbsp.
Medium Onion, finely diced 1
Garlic cloves, crushed 2
Bacon, Chopped 1 Packet (250g)
Cake flour 2 tbsp.
Milk 1 L
Cheddar Cheese, grated 2 cup
Mozzarella cheese, grated 1 cup
Cream Cheese 1 tub (240g)
Salt To taste
Freshly ground Black Pepper to taste
In a large, heavy based saucepan, heat the oil and butter over medium high heat.
Add the onion, garlic and bacon, sauté for 5 to 8 minutes. Until the bacon has rendered its fat and has started to brown.
Add the cake flour and mix thoroughly until the flour has been absorbed into the fat.
Add the milk and the macaroni and bring to a very gentle simmer. Cook for 10 to 12 minutes until the macaroni is cooked and tender.
Add the cheeses and bring back to a gentle simmer. Stirring continuously until the cheese has completely melted.
Adjust the thickness of the mac & cheese with milk if needed.
Season with salt and pepper.
