Popping Up in the Dragonfly

We hosted the first of our weekly Dragonfly Pop-Up dining experiences on Thursday, 31st January: what a magical evening! Executive Chef Daryn Bowers and his team put on a scintillating culinary display that left guests enthralled.

Octopus Terrine

Squid ink, root vegetables, langoustines, flaked sea salt and tomato consume

Oxtail Croquettes

Cous Cous crumbed, with baby vegetables and jus

Duxelle Wonton

Japanese mushrooms, wrapped in crisp pastry sheets, served with pea puree and micro greens


Plat Principal

Smoked Duck

Confit leg, oak smoked breast, served with pommes dauphinoise and broccoli florets

Sea Floor

Grilled North Coast crayfish served with butternut influences and lemon oil

Springbok Shank

Slow braised springbok shank, served on sultana polenta with confit onions and garlic



Chocolate Dome

Chocolate brownie, strawberry leather, candied zest and blood orange jelly
